These delicious and healthy little quinoa bites are made with quinoa, oats, dried fruit and nuts, baked into satisfying little two-bite sized snacks.

unflavored non-dairy milk

ground flax seeds

cooked quinoa

oats

brown sugar

ground cinnamon

almonds

pumpkin seeds

shredded coconut

raisins
dried cherries, cranberries and/or currants (I used a mixture)

Whisk milk and flax seeds together in a small bowl. Set aside and allow to sit for at least 10 minutes. You can get everything else together in the meantime.

Preheat oven to 350. Spray muffin tins with nonstick cooking spray.

Stir together remaining ingredients in a large mixing bowl. Add in flax mixture and mix completely.

Place about 2 heaping tbsp. of your mixture into the bottom of each muffin cup. Press the mixture down firmly. Keeping your hands wet will help with this.

Bake for 12 minutes. Allow to cool completely before removing from tins.
