This vegan minestrone is made with veggies, beans & pasta in flavorful tomato broth.

HOW IT'S MADE 1. Sweat onion, carrots, celery, and garlic in olive oil.

2. Add broth, tomatoes, beans and spices. 3. Simmer.

4. Add zucchini. 5. Continue simmering.

6. Add spinach. 7. Continue simmering.

8. Remove from heat. 9. Stir in fresh basil.

10. Ladle into bowls. 11. Top with vegan Parmesan. 12. Serve.
