This vegan gumbo is packed with juicy tomatoes, Cajun spices and hearty red bean andouille meatballs!

HOW IT'S MADE 1. Make a roux by cooking flour and olive oil in a large pot.

2. Add onions, green pepper, and celery. Cook until softened. 3. Add garlic.

4. Add broth, tomatoes, okra and spices.

5. Simmer until the vegetables are tender.

6. Combine red beans, breadcrumbs and seasonings in a food processor.

7. Roll into balls and bake.

8. Ladle the stew over the beanballs and top with rice and scallions.
