– 3 ¼ cups flour – 2 tsp baking powder – 1 tbsp ground ginger – 1 tbsp cinnamon – ½ tsp ground cloves – ½ tsp ground nutmeg – ¾ teaspoon salt – ¾ cup vegan butter – ¾ cup brown sugar – ¾ cup molasses (not blackstrap molasses) – 1 tsp vanilla extract

Do I really need to chill the dough? I highly recommend it! If you skip this step your cookies will probably spread out too much.

How do you know when gingerbread is cooked? Vegan gingerbread will still be pretty soft when it comes out of the oven, but the cookies should be dry & partially set at their centers. They will continue to firm up as they cool.
