STORAGE Vegan carrot muffins will keep in an airtight container at room temperature for about 3 days, in the fridge for about 5 days, or in the freezer for about a week.

FREQUENTLY ASKED QUESTIONS Can these muffins be gluten-free? I haven't tested a gluten-free version of this recipe, but it might work with an all-purpose gluten-free flour blend.

Can these muffins be made oil-free? Unsweetened applesauce might work as a substitute for the oil, but I haven't tested it, so I can't say for sure.
