HOW IT'S MADE 1. Sweat the onion in oil. 2. Add spices and aromatics.

3. Add red lentils and water.

4. Simmer.

5. Add tomatoes and coconut milk. 6. Continue simmering. 7. Season with salt to taste.

8. Serve with rice, fresh cilantro, and roasted cashews.
