This hearty stew is packed with flavor and is perfect for a weeknight dinner! 

HOW TO MAKE EGGPLANT STEW: 

Heat oil in a large pot and add diced eggplant & onion. Give everything a stir to coat the eggplant evenly with the oil. Add garlic & spices, and cook everything for about a minute.

HOW TO MAKE EGGPLANT STEW: 

Next add vegetable broth, chickpeas, tomatoes, & tomato paste. Raise the heat & bring stew to a simmer. Let it cook for  until it's nice & thick, & the eggplant is super tender.

Add a handful of spinach when the stew is just about done & let it cook for a few more minutes to wilt the greens before serving.

Hearty, spicy eggplant stew that is delicious and totally meatless!
