Heat oil in a large pot and add diced eggplant & onion. Give everything a stir to coat the eggplant evenly with the oil. Add garlic & spices, and cook everything for about a minute.

Next add vegetable broth, chickpeas, tomatoes, & tomato paste. Raise the heat & bring stew to a simmer. Let it cook for until it's nice & thick, & the eggplant is super tender.
