Happy Valentine's Day everyone!
Anyhow, I saw some super-ripe avocados at the store last weekend and got all inspired to do some kitchen tinkering. I decided to try my hand at some chocolate pudding. My initial reaction was that it was great, but I could still taste the avocado. This wasn't a bad thing...maybe just a little confusing. A quick glance into the cabinet for additional flavor revealed my silver bullet ingredient: peanut butter. You very, very rarely go wrong when inspiration to add peanut butter to anything hits.
Chocolate Peanut Butter Avocado Pudding
- 1 very ripe avocado
- ¼ cup cacao or cocoa powder
- 1 tsp. vanilla extract
- 2 tbsp. maple syrup
- 1 tbsp. creamy peanut butter
- a few cacao nibs for sprinkling, optional
Place avocado pulp in a small mixing bowl and mash well with a fork or potato masher. Add remaining ingredients and whisk until smooth.
