Happy Valentine's Day everyone!
Anyhow, I saw some super-ripe avocados at the store last weekend and got all inspired to do some kitchen tinkering. I decided to try my hand at some chocolate pudding. My initial reaction was that it was great, but I could still taste the avocado. This wasn't a bad thing...maybe just a little confusing. A quick glance into the cabinet for additional flavor revealed my silver bullet ingredient: peanut butter. You very, very rarely go wrong when inspiration to add peanut butter to anything hits.
Chocolate Peanut Butter Avocado Pudding
You'd never guess that this decadent vegan chocolate pudding was made from avocados!
Ingredients
- 1 very ripe avocado
- ¼ cup cacao or cocoa powder
- 1 tsp. vanilla extract
- 2 tbsp. maple syrup
- 1 tbsp. creamy peanut butter
- a few cacao nibs for sprinkling, optional
Instructions

Place avocado pulp in a small mixing bowl and mash well with a fork or potato masher. Add remaining ingredients and whisk until smooth.
Say what? Just from one 'cado? Sneaky sneaky this whole vegetables in desserts craze.
I know! It's kind of crazy right? But seriously, you'd never know this was avocado based!
